Ingredients

2 cups fresh pineapple chunks (approximately 1 medium pineapple)

2 ripe bananas, peeled

1 cup coconut yogurt (substitute with Greek yogurt for a tangier flavor)

2 tablespoons honey or maple syrup (adjust based on desired sweetness)

1/2 teaspoon vanilla extract

A pinch of sea salt

Optional toppings: shredded coconut, finely chopped nuts, or mini chocolate chips

Instructions

Prep the Pineapple:

    - If using a whole pineapple, start by peeling the outer skin, removing the core, and cutting it into small chunks. You will need about 2 cups of pineapple chunks for this recipe.

      Blend the Mixture:

        - In a blender, combine the prepared pineapple chunks, ripe bananas, coconut yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt.

          - Blend the mixture on high speed until it is completely smooth. Stop occasionally to scrape down the sides of the blender, ensuring that everything is well incorporated.

            Taste Test:

              - After blending, taste the mixture to check for sweetness. If you desire a sweeter popsicle, add a little more honey or syrup to suit your taste, and blend again until combined.

                Fill the Molds:

                  - Carefully pour the blended mixture into silicone popsicle molds. Fill each mold nearly to the top, leaving a small space for expansion as the popsicles freeze.

                    - For added texture and flavor, you can sprinkle optional toppings like shredded coconut or mini chocolate chips on top of the mixture in each mold.

                      Insert Sticks:

                        - Insert a popsicle stick into the center of each mold, ensuring it stands upright. If the mixture seems too liquid to hold the stick, allow it to sit at room temperature for about 5-10 minutes until it thickens slightly before inserting the sticks.

                          Freeze:

                            - Carefully place the filled molds in the freezer. Freeze the popsicles for at least 4-6 hours, or until they are completely solid.

                              Unmold the Pops:

                                - When ready to serve, remove the pops by running warm water over the outside of the molds for a few seconds to help loosen them, or gently twist and pull them out.

                                  Enjoy:

                                    - Serve the Tropical Bliss Pops immediately for a refreshing treat, or store them in an airtight container in the freezer for enjoying later!
