Ingredients

2 cups fresh strawberries, hulled and sliced

1 ripe kiwi, peeled and chopped

1 cup Greek yogurt (choose plain for a tangy flavor or vanilla for sweetness)

1/2 cup coconut water (substitute with any fruit juice you prefer)

1-2 tablespoons honey or maple syrup (adjust to taste based on preference)

1 tablespoon freshly squeezed lime juice

Optional: fresh mint leaves for garnish

Instructions

Prep the Fruit: Begin by hulling the strawberries and slicing them into halves or quarters to expose more surface area for blending. Next, peel the kiwi and chop it into small, bite-sized pieces. Set both fruits aside.

Blend the Base: In a high-speed blender, combine the prepared strawberries, chopped kiwi, Greek yogurt, coconut water (or your chosen juice), honey or maple syrup, and lime juice. Blend on high until the mixture becomes smooth and creamy. Stop occasionally to scrape down the sides with a spatula, ensuring all ingredients are thoroughly incorporated.

Taste Test: After blending, take a moment to taste the smoothie. If it’s not sweet enough for your liking, add an additional drizzle of honey or maple syrup and blend briefly again until combined.

Layer the Pops: For an aesthetically pleasing layered look, fill your popsicle molds with the strawberry smoothie mixture until they are about halfway full (approx. 1/3 cup). Then take the rest of the mixture and pour it over the top, filling the molds nearly to the brim. If you prefer a swirled effect, use a small spatula or spoon to gently swirl the two mixtures together before they freeze.

Insert Sticks: Carefully place the popsicle sticks into the centers of each mold, ensuring they are standing upright and centered.

Freeze: Transfer the molds to the freezer and allow them to set for at least 4-6 hours, or until completely frozen solid.

Remove the Pops: When it's time to enjoy your pops, run each mold under warm water for a few seconds to help release the pops. Gently pull on the sticks to remove the frozen delights from the molds.

Serve and Enjoy: If desired, garnish each popsicle with fresh mint leaves for an extra pop of color and flavor. Relish your frosty strawberry kiwi bliss pops on a warm sunny day or whenever you crave a refreshing treat!
