1 cup fresh or frozen blueberries

1 cup Greek yogurt (choose plain or vanilla based on preference)

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon pure vanilla extract

1 tablespoon fresh lemon juice

1 cup granola or crushed nuts (optional, for added crunch)

Mini cupcake liners or ice cube trays for freezing

Instructions
 

Prep the Blueberries: If you're using fresh blueberries, wash them under cool water and pat them dry with a clean towel. For frozen blueberries, remove them from the freezer and let them sit in a bowl at room temperature for about 10-15 minutes until slightly thawed.

    Create the Cream Mixture: In a medium mixing bowl, blend the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice together. Mix thoroughly until the concoction is smooth and creamy. Taste the mixture and, if desired, add more honey or maple syrup to achieve the preferred level of sweetness.

      Combine Everything: Gently fold the prepared blueberries into the yogurt mixture. Be careful to leave some whole blueberries intact for texture in the final bites.

        Prepare the Containers: Line a mini muffin tin with cupcake liners for easy serving, or prepare an ice cube tray by lightly spraying it with cooking spray to facilitate easy removal later.

          Fill the Liners/Tray: Using a spoon, fill each cupcake liner or ice cube compartment with the blueberry cream mixture, filling each around three-quarters full. If you like, sprinkle some granola or crushed nuts on top for an appealing crunch.

            Freeze the Bites: Carefully place the muffin tin or ice cube tray in the freezer. Allow the mixture to freeze completely for at least 2-4 hours, or until it is firm to the touch.

              Serve: Once fully frozen, gently remove the bites from the liners or tray. If you opted for an ice cube tray, running warm water over the external part of the tray may help release the bites more easily.
