Ingredients

4 cups seedless watermelon, cut into cubes

1/4 cup freshly squeezed lime juice (approximately 2 limes)

2 tablespoons honey or agave syrup (adjust to your preference)

Zest of 1 lime

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Watermelon: Begin by chopping the seedless watermelon into bite-sized cubes. To enhance the texture of your popsicles, freeze the watermelon cubes for 1-2 hours before blending.

Blend the Ingredients: In a high-speed blender, combine the frozen watermelon cubes (or fresh if not freezing), lime juice, honey or agave syrup, lime zest, and a pinch of salt. Blend thoroughly until the mixture is completely smooth and well combined.

Taste and Adjust: After blending, taste the mixture. If you prefer a sweeter popsicle, gradually add more honey or agave syrup to your liking. For a more robust lime flavor, consider adding an extra splash of lime juice.

Strain (Optional): For a silky-smooth popsicle texture, you can strain the mixture through a fine-mesh sieve into a bowl to eliminate any pulp. This step is optional but recommended for a refined finish.

Fill the Molds: Carefully pour the watermelon-lime mixture into popsicle molds, ensuring to leave a small gap at the top to allow for expansion as they freeze. If you like, you can add a few small mint leaves to each mold for an aromatic touch.

Insert Sticks: Position the popsicle sticks into the molds. If your molds are prone to tilting, freeze them for approximately 30 minutes to set the mixture slightly before inserting the sticks upright.

Freeze: Transfer the filled molds to the freezer and allow them to freeze for a minimum of 4-6 hours, or until they are fully solid.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out. Serve them right away and savor this refreshing summer treat!

Prep Time: 15 minutes | Total Time: 6 hours | Servings: Makes about 10 popsicles.

                    - Presentation Tips: Consider serving these popsicles on a colorful platter adorned with fresh mint leaves and slices of lime for added visual appeal!
