Ingredients

2 cups Greek yogurt (choose plain or vanilla for added flavor)

1/2 cup honey or maple syrup (adjust to taste for sweetness)

1 teaspoon vanilla extract

1/4 cup almond milk (or your preferred milk)

1/4 cup almond flour

2 tablespoons poppy seeds

1/2 cup sliced almonds (toasted for a richer taste)

1/4 teaspoon salt

1 tablespoon lemon zest (optional but adds a lovely citrus note)

Instructions

Prepare the Baking Dish: Start by lining an 8x8 inch (or a similar-sized) baking dish with parchment paper. Make sure to leave some excess paper hanging over the sides to make removing the bars easier later on.

Mix the Base: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and almond milk. Using a whisk, blend these ingredients together until the mixture is smooth and fully incorporated.

Incorporate Dry Ingredients: To the yogurt mixture, add the almond flour, poppy seeds, toasted sliced almonds, salt, and the optional lemon zest if using. Carefully stir the mixture with a spatula or wooden spoon until all dry ingredients are evenly mixed into the yogurt base.

Fill the Dish: Pour the yogurt mixture into the lined baking dish. Using a spatula, gently spread the mixture out evenly across the dish to ensure uniform thickness.

Freeze: Transfer the baking dish to the freezer. Allow it to freeze for a minimum of 4 hours, or until the mixture is completely solid.

Cut into Bars: Once fully frozen, lift the mixture out of the baking dish using the parchment overhang. Place it on a cutting board and slice into bars or squares of your desired size.

Serve: Before serving, let the bars sit at room temperature for a few minutes so they soften slightly, making them easier to bite into. Enjoy your cool and refreshing treat!

Store: If you have any leftovers, store the bars in an airtight container in the freezer where they'll keep for up to a month without losing quality.
