1 tablespoon lemon juice

1 tablespoon cornstarch (for thickening)

For the Cookie Sandwiches:

1 cup rolled oats

1 cup almond flour (or substitute with all-purpose flour)

1/4 cup coconut oil or unsalted butter, melted

1/4 cup maple syrup or honey

1/2 teaspoon baking soda

1/4 teaspoon salt

Optional: 1/2 cup crushed walnuts or pecans (for added crunch)

Instructions
 

Prepare the Apple Filling:

    - In a medium saucepan, combine the diced apples, brown sugar, ground cinnamon, lemon juice, and cornstarch.

      - Cook over medium heat for about 5-7 minutes, stirring occasionally until the apples become tender and the mixture thickens.

        - Remove from heat and allow to cool completely before using.

          Mix the Yogurt Filling:

            - In a mixing bowl, add the Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and ground nutmeg.

              - Whisk together until the mixture is smooth and well combined. Taste and adjust sweetness if desired.

                    - In a large mixing bowl, combine rolled oats, almond flour, melted coconut oil, maple syrup (or honey), baking soda, and salt.
