2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

3 cups Greek yogurt (choose plain or a flavored version like vanilla)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups mixed berries (fresh or frozen: strawberries, blueberries, raspberries, blackberries)

1/4 cup fresh mint leaves, chopped (optional for garnish)

1 cup whipped cream (optional for serving)

Instructions
 

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture is evenly coated and has a texture similar to wet sand. Firmly press this mixture into the bottom of a 9-inch pie dish to create a smooth and even crust. Place the pie dish in the freezer for about 15 minutes to allow the crust to set.

    Make the yogurt filling: In a large mixing bowl, use a whisk to combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk until the mixture is completely smooth and creamy. Taste the filling and adjust the sweetness according to your preference.

      Add the berries: Carefully fold in the mixed berries into the yogurt filling, using a spatula to mix gently. Be cautious to preserve the berries’ shape and avoid crushing them.

        Combine layers: After the crust has set, remove it from the freezer. Pour the yogurt and berry mixture over the crust, spreading it out evenly with a spatula. Gently tap the pie dish on the counter to eliminate any air bubbles trapped in the filling.

          Freeze: Cover the pie with plastic wrap or a lid, and place it in the freezer. Allow it to freeze for a minimum of 4 hours or until the filling is completely solid.
