1/2 cup mixed berries (fresh or thawed frozen berries, your choice)

1/2 teaspoon vanilla extract (for added depth of flavor)

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt with honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk vigorously until the mixture is smooth and creamy, ensuring all ingredients are well incorporated.

    Incorporate Chia Seeds: Gently stir in the chia seeds until they are evenly distributed throughout the yogurt mixture. Allow the mixture to rest for about 10-15 minutes; this will give the chia seeds time to absorb moisture and swell, thickening the yogurt.

      Fold in Berries: Carefully fold the mixed berries into the yogurt mixture, taking care not to break them down too much. If you’re using frozen berries, ensure they are fully thawed and drained to avoid excess moisture.

        Layer with Granola: Line an 8x8 inch (20x20 cm) baking dish with parchment paper for easy removal later. Pour half of the yogurt mixture into the prepared dish, spreading it out evenly. Next, sprinkle half of the granola over this layer, distributing it evenly.

          Complete the Layering: Pour the remaining yogurt mixture on top of the granola layer, smoothing it down to create an even surface. Then, finish by sprinkling the rest of the granola on top, providing a crunchy texture to your bars.

            Freeze the Mixture: Cover the baking dish with plastic wrap or foil and place it in the freezer. Allow it to freeze for at least 4-5 hours, or until the bars are completely firm and set.

              Slice and Serve: Once the bars are frozen solid, remove the baking dish from the freezer. Using the parchment paper, lift the slab out of the dish carefully. With a sharp knife, cut the mixture into squares or bars, depending on your preference.
