Ingredients

2 cups Greek yogurt (plain or vanilla variety)

1/2 cup honey or pure maple syrup

1/4 cup unsweetened cocoa powder

1/2 teaspoon pure peppermint extract

1/4 teaspoon sea salt

1/2 teaspoon pure vanilla extract

1 cup dark chocolate chips (for the topping)

1 tablespoon coconut oil (optional, for a smoother chocolate consistency)

Fresh mint leaves (optional, for garnish)

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt with honey or maple syrup, unsweetened cocoa powder, peppermint extract, sea salt, and vanilla extract. Use a whisk to blend the ingredients until the mixture is smooth and has a uniform texture.

Line Your Tray: Take an 8x8-inch square baking dish and line it with parchment paper. Ensure to leave some excess paper hanging over the edges to facilitate easy removal later on.

Spread the Mixture: Pour the yogurt mixture into the prepared baking dish. Use a spatula to spread the mixture evenly, making sure to fill the corners and edges for a consistent thickness.

Freeze the Yogurt: Carefully place the baking dish in the freezer and let it chill for at least 4 hours, or until the yogurt is completely firm.

Melt the Chocolate: As the yogurt sets, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips with coconut oil (if you're using it). Microwave in 30-second intervals, stirring well in between, until the chocolate is completely melted and smooth.

Cut into Wedges: Once the yogurt has frozen, lift it out of the baking dish using the parchment paper overhang. Place the frozen block onto a cutting board and slice it into wedges or bars, according to your preference.

Chocolate Coating: Dip each wedge into the melted chocolate, or if you prefer a lighter touch, drizzle the chocolate over the top. Allow the excess chocolate to drip off the edges.

Refreeze: Arrange the chocolate-coated wedges back on the parchment-lined tray and return them to the freezer for an additional 30 minutes to allow the chocolate to set.

Serve and Garnish: Once the chocolate has hardened, serve the wedges immediately, or store them in an airtight container in the freezer for future enjoyment. For an added touch, garnish each serving with a fresh mint leaf just before serving.

Prep Time, Total Time, Servings: 15 minutes | 5 hours (including freezing time) | Makes 12 wedges.
