Ingredients

2 cups unsweetened coconut yogurt

1/2 cup sweetened shredded coconut

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

1/2 cup dark chocolate chips (choose dairy-free if desired)

1 tablespoon coconut oil

Optional toppings: extra shredded coconut, finely chopped nuts, or colorful sprinkles

Instructions

Mix Ingredients: In a medium mixing bowl, combine the unsweetened coconut yogurt, sweetened shredded coconut, honey (or maple syrup), and pure vanilla extract. Whisk the mixture vigorously until it is completely smooth and all ingredients are well blended.

Prepare Molds: Carefully spoon the yogurt mixture into popsicle molds, making sure to leave a small gap at the top of each mold to allow for expansion as they freeze. If you’d like to add optional toppings for an extra flavor boost, sprinkle them in now before filling to the top.

Insert Sticks: After filling the molds, gently insert popsicle sticks into the center of each one. Ensure the sticks are vertical and stable to keep them positioned correctly as they freeze.

Freeze: Transfer the molds to the freezer and allow them to freeze for a minimum of 4 to 6 hours, or until the pops are completely firm and solid.

Melt Chocolate: While the pops are freezing, prepare the delicious chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring well between each interval, until the chocolate is melted and silky smooth.

Remove Pops: When the yogurt pops are frozen solid, take them out of the freezer. If they are stuck, run warm water over the outside of the molds briefly to help release them.

Coat in Chocolate: Dip each frozen pop into the melted chocolate, allowing any excess chocolate to drip off back into the bowl. Place the coated pops onto a parchment-lined baking sheet for easy cleanup.

Add Toppings: Before the chocolate hardens, sprinkle your chosen optional toppings—extra shredded coconut, chopped nuts, or vibrant sprinkles—over the chocolate coating to add a delightful crunch and visual appeal.

Final Freeze: Return the coated pops back to the freezer for an additional 30 minutes to allow the chocolate to set and harden properly.

Serve and Enjoy: Once the chocolate has set perfectly, take the pops out of the freezer, and they’re ready to be enjoyed! Treat yourself to these scrumptious Frozen Yogurt Coconut Chocolate Pops!
