Ingredients

1 cup all-purpose flour

2 tablespoons cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup unsalted butter, softened to room temperature

1/4 cup granulated sugar

1/4 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

1 cup coffee-flavored frozen yogurt (or plain yogurt blended with 1-2 shots of espresso)

Whipped cream, for topping

Cocoa powder or chocolate shavings, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it reaches the right temperature for baking.

Prepare the Cookie Dough: In a medium mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until well combined. In a separate large bowl, cream the softened butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until the mixture is light and fluffy. Add the egg and vanilla extract, and continue mixing until fully incorporated. Gradually add the dry ingredients to the wet mixture, mixing just until the dough comes together. Gently fold in the chocolate chips with a spatula.

Shape the Cookie Cups: Lightly grease a muffin tin with cooking spray or line it with silicone muffin liners for easier removal. Using a cookie scoop or tablespoon, scoop an ample amount of cookie dough into each muffin cup. With your fingers or the back of a spoon, press the dough firmly into the bottom and up the sides of each cup to form a hollow shape, leaving some thickness for structure.

Bake: Carefully place the muffin tin in the preheated oven and bake for 10-12 minutes, or until you notice the edges are set and the tops appear slightly puffed. Once done, remove the muffin tin from the oven and let the cookie cups cool in the tin for about 10 minutes.

Fill with Frozen Yogurt: Once cooled, gently remove the cookie cups from the muffin tin and transfer them to a wire rack to cool completely. After they are cool, fill each cookie cup with the coffee-flavored frozen yogurt, pressing down lightly to ensure a packed filling.

Garnish and Serve: Top each filled cookie cup generously with a dollop of whipped cream and finish with a dusting of cocoa powder or a sprinkling of chocolate shavings for an elegant touch. You can serve them immediately to enjoy their soft texture or place them in the freezer for up to 30 minutes for a firmer treat.

Prep Time: 20 minutes | Total Time: 45 minutes | Servings: 12 cookie cups

Presentation Tips: Arrange the cookie cups on a decorative platter for a beautiful display. You can add a few coffee beans or chocolate curls around them to enhance the presentation! Enjoy your delightful treat!
