2 cups rolled oats

1 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 cup pure maple syrup

1/4 cup almond butter (or any preferred nut butter)

1/4 cup brewed espresso, cooled to room temperature

1 teaspoon vanilla extract

1/2 cup dark chocolate chips

1/4 cup chopped nuts (walnuts or almonds work well)

1/4 teaspoon salt

Optional: 1/4 cup shredded coconut for added texture and flavor

Layer the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, cocoa powder, and salt. Use a whisk or spatula to thoroughly mix these dry ingredients, ensuring there are no clumps.

    Create the Wet Mixture: In a separate bowl, whisk together the maple syrup, almond butter, cooled brewed espresso, and vanilla extract. Mix until the mixture is smooth and silky—this will help to incorporate all the flavors evenly.

      Combine Mixtures: Pour the wet mixture over the dry ingredients. Use a spatula to gently fold them together, ensuring that every bit of the dry mixture is well coated with the wet ingredients.

        Add Extras: Carefully fold in the dark chocolate chips and chopped nuts, as well as the shredded coconut if you’re using it. Mix until all of these extras are distributed evenly throughout the mixture.

          Prepare the Pan: Line a 9x9 inch baking dish with parchment paper, allowing some overhang on the sides. This will make it easier to lift out the bars once they are set.

            Press it Down: Transfer the granola mixture to the prepared pan. Use a spatula, or your clean hands, to firmly press the mixture into an even layer. It should be compact to ensure the bars hold together after freezing.

              Freeze the Mixture: Cover the pan tightly with plastic wrap and place it in the freezer. Allow it to freeze for about 2 to 3 hours until the mixture is solid and firm to the touch.

                Slice and Serve: Once thoroughly set, remove the pan from the freezer. Lift the granola mixture out of the pan using the edges of the parchment paper. Place it on a cutting board and slice into your desired sizes—typically 8 to 12 bars.

                  Store and Enjoy: Store the granola bars in an airtight container in the freezer, where they will remain fresh for up to a month. For a cool, refreshing snack, enjoy them straight from the freezer!
