1 cup graham cracker crumbs

1 tablespoon cornstarch

1 tablespoon freshly squeezed lemon juice

1 teaspoon pure vanilla extract

2 cups vanilla Greek yogurt

1/4 cup honey or maple syrup (adjust based on your desired sweetness)

1 teaspoon pure vanilla extract

1/4 teaspoon salt

Fresh peach slices

Crushed graham crackers

Fresh mint leaves (optional)

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, granulated sugar, and ground cinnamon. Mix until all the crumbs are evenly coated and the mixture resembles wet sand. Press this mixture firmly into the bottom of an 8x8 inch baking dish to create an even crust. Bake in the preheated oven for 10 minutes until lightly golden, then remove and let cool completely.

    Make the Peach Filling: In a medium saucepan over medium heat, combine the diced peaches, granulated sugar, cornstarch, freshly squeezed lemon juice, and pure vanilla extract. Stir continuously and cook for about 5-7 minutes until the peaches soften and the mixture has thickened slightly. Remove from heat and let it sit for a few minutes to cool.

      Prepare the Yogurt Layer: In a mixing bowl, add the vanilla Greek yogurt, honey (or maple syrup), vanilla extract, and salt. Stir with a spatula or whisk until everything is well combined and the mixture is smooth and creamy.

        Assemble the Squares: Once the crust is completely cool, evenly spread the peach filling over the crust layer. Then, gently dollop the yogurt mixture on top of the peach filling, using a spatula to carefully spread it out and cover the peach layer as evenly as possible.

          Freeze: Cover the baking dish tightly with plastic wrap or aluminum foil to prevent ice crystals from forming. Place the dish in the freezer and allow it to freeze for at least 4 hours, or until the layers are fully set.

            Serve: After freezing, remove the dish from the freezer and let it sit at room temperature for approximately 5-10 minutes. This will help soften it slightly for easier cutting.
