Ingredients

For the Crust and Topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/3 cup packed brown sugar

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter, melted and slightly cooled

For the Filling:

2 cups plain Greek yogurt

1 cup pumpkin puree (either canned or homemade)

1/2 cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon pumpkin spice blend

1/4 teaspoon salt

Optional: Whipped cream for serving

Instructions

Prepare the Crust/Topping:

    - Start by preheating your oven to 350°F (175°C).

      - In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, salt, and ground cinnamon. Stir thoroughly until all dry ingredients are well incorporated.

        - Drizzle the melted butter over the dry ingredients, using a fork or your hands to mix until the mixture resembles coarse crumbs. Set aside approximately 1 cup of this crumble for later use as topping.

          - Press the remaining crumble mixture firmly into the bottom of a greased 8x8 inch baking dish to create an even crust.

            Bake the Crust:

              - Place the baking dish in the preheated oven and bake for 10-12 minutes, or until the crust is lightly golden. Once baked, remove from the oven and allow it to cool slightly while you prepare the filling.

                Make the Pumpkin Yogurt Filling:

                  - In a separate large mixing bowl, combine the plain Greek yogurt, pumpkin puree, maple syrup (or honey), vanilla extract, pumpkin spice blend, and salt. Mix these ingredients together thoroughly until you achieve a smooth and creamy consistency.

                    Assemble the Bars:

                      - Pour the pumpkin yogurt mixture over the cooled crust, using a spatula to spread it out evenly.

                        - Evenly sprinkle the reserved crumble mixture on top of the pumpkin yogurt filling, ensuring it covers the filling generously.

                          Freeze the Bars:

                            - Place the baking dish into the freezer and freeze for at least 4-6 hours or until the bars are completely firm to the touch.

                              Serve:

                                - To serve, remove the frozen bars from the baking dish by lifting them out with the help of parchment paper (if used). Cut into squares or bars as desired.

                                  - For an extra treat, add a dollop of whipped cream on top of each bar just before serving.

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes | Servings: 9 bars

                                      - Presentation Tips: Consider serving the bars on a decorative platter, garnished with a sprinkle of additional pumpkin spice or a few pecan halves for an added festive touch.
