2 cups plain Greek yogurt

1 cup fresh raspberries (plus extra for garnish)

1 cup freshly squeezed lemon juice (about 4-5 medium lemons)

Zest of 2 lemons

1/2 cup honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon pure vanilla extract

Pinch of salt

Non-stick cooking spray (for preparing the molds)

Instructions
 

Prepare the Raspberry Swirl:

    In a small saucepan over medium heat, combine 1 cup of fresh raspberries with 2 tablespoons of honey (or maple syrup). Cook for approximately 5 minutes, stirring gently until the raspberries break down and form a vibrant sauce. Once ready, remove the saucepan from heat and allow the sauce to cool slightly.

      Make the Lemon Yogurt Mixture:

        In a large mixing bowl, whisk together the plain Greek yogurt, fresh lemon juice, lemon zest, the remaining honey (or maple syrup), vanilla extract, and a pinch of salt until the mixture is smooth and creamy. Taste it to see if you’d like to adjust the sweetness, adding more honey or maple syrup if desired.

          Assembly of the Rings:

            Lightly spray your silicone ring molds with non-stick cooking spray to prevent sticking. Carefully pour the lemon yogurt mixture into the molds, filling each about halfway to allow room for the raspberry swirl.

              Swirl in the Raspberry Sauce:

                Using a spoon, drop spoonfuls of the cooled raspberry sauce onto the surface of the lemon yogurt mixture in each mold. With a skewer or toothpick, gently swirl the raspberry sauce into the yogurt mixture, creating a beautiful marbled effect without mixing it completely.

                  Freeze the Rings:

                    Place the filled molds in the freezer and let them freeze for a minimum of 4-6 hours, or until they are fully set and solid.

                      Unmold and Serve:

                        To release the frozen yogurt rings easily, run warm water over the outside of the silicone molds for a few seconds. Gently pull the rings from the molds. Arrange the vibrant rings on a serving platter, garnishing with extra fresh raspberries on top for an added touch of freshness.
