Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust based on your sweetness preference)

1/2 cup strawberry jam (store-bought or homemade)

1 cup fresh strawberries, diced (optional for added texture)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Non-stick cooking spray or silicone molds for easy removal

Instructions

Prepare Your Molds: Start by preheating your creativity! Lightly coat your coin-shaped silicone molds or mini muffin tin with non-stick cooking spray to ensure these delicious coins will release easily once frozen.

Make the Yogurt Base: In a spacious mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Whisk everything together until the mixture is beautifully smooth and well-combined—this is the foundation of your refreshing treat!

Add Strawberry Jam: Carefully incorporate the strawberry jam into the yogurt mixture by gently folding it in. Aim for a marbled effect by leaving some streaks visible. If you opted for the diced fresh strawberries, now is the time to fold them in as well for an extra burst of flavor and texture.

Fill Molds: Using a spoon, delicately fill each of your prepared molds with the yogurt mixture. Make sure to smooth the tops for a nice finish, but leave a little space at the top of each mold—this allows room for the mixture to expand as it freezes.

Freeze: Place your filled molds in the freezer, allowing them to freeze for at least 4-6 hours or until they are completely solid. Patience is key!

Remove from Molds: Once frozen solid, it’s time to enjoy the fruits of your labor! Gently pop the yogurt coins out of the molds. If you’re using a muffin tin and find them difficult to release, run warm water over the outside of the tin to help loosen them.

Store: For storage, place the frozen yogurt coins into an airtight container and keep them in the freezer. Enjoy your scrumptious treats right away, or keep them stored for up to a month for those sweet cravings ahead.

Serve: Whenever you desire a refreshing bite, take out a few of your delightful yogurt coins. Serve them as they are, or elevate the presentation with a garnish of fresh strawberry slices or a drizzle of extra strawberry jam for that added spritz of decadence.
