Ingredients

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup unsweetened applesauce

1/4 cup milk (or almond milk for a dairy-free option)

1/4 cup Greek yogurt (can be flavored or plain)

2 large eggs

1 teaspoon vanilla extract

1 cup mixed fresh fruit (such as strawberries, blueberries, bananas, kiwis, etc.)

1/2 cup cream cheese (softened to room temperature)

2 tablespoons powdered sugar (for frosting)

1 teaspoon vanilla extract (for frosting)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup.

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, salt, and ground cinnamon until evenly mixed.

Mix Wet Ingredients: In a separate bowl, combine the unsweetened applesauce, milk, Greek yogurt, eggs, and 1 teaspoon of vanilla extract. Whisk until the mixture is smooth and creamy.

Combine Mixtures: Pour the wet ingredient mixture into the bowl with the dry ingredients. Stir gently until just combined; it's okay if the batter is slightly lumpy. Carefully fold in the mixed fresh fruit, setting aside a small handful for topping the muffins.

Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full. Garnish the tops of the muffins with the reserved pieces of fresh fruit for an attractive presentation.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool Muffins: Once baked, remove the muffins from the oven and allow them to cool in the pan for about 5 minutes. Afterward, transfer them to a wire rack to cool completely.

Prepare the Frosting: While the muffins are cooling, make the frosting. In a small bowl, blend the softened cream cheese with the powdered sugar and 1 teaspoon of vanilla extract until smooth and creamy.

Frost the Muffins: After the muffins are fully cooled, use a spatula or knife to spread a generous dollop of cream cheese frosting over the top of each muffin.

Serve & Savor: Enjoy your fruit pizza breakfast muffins fresh, or store them in an airtight container in the refrigerator for up to 3 days. They make for a delightful breakfast treat any day of the week!
