Ingredients

2 large ears of fresh corn

4 tablespoons unsalted butter

3 cloves garlic, finely minced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

Juice of half a lime (optional for serving)

Instructions

Prepare the Corn: Begin by carefully slicing the ears of corn into rib-like sections. Stand each ear upright and, with a sharp knife, cut down the sides of the cob to create 4-6 long, rib-shaped pieces. Set the corn ribs aside.

Make the Garlic Butter: In a small saucepan, melt the unsalted butter over medium heat. Once melted and bubbling gently, add the minced garlic. Sauté the garlic for about 1-2 minutes, or until it becomes fragrant and slightly golden, being careful not to allow it to brown. Incorporate the smoked paprika and Italian seasoning into the melted butter and garlic, stirring well to combine. Season the mixture with salt and black pepper according to your taste.

Coat the Corn Ribs: In a large mixing bowl, add the prepared corn ribs and pour the garlic butter mixture over them. Using tongs or your hands, gently toss the corn ribs until each piece is evenly coated in the flavorful garlic butter.

Grill the Corn Ribs: Preheat your grill or grill pan to medium heat. Once hot, arrange the garlic butter-coated corn ribs on the grill. Grill for approximately 5-7 minutes on each side, or until the corn is tender and beautifully charred with grill marks. For added depth of flavor, consider basting the corn ribs with more garlic butter during grilling.

Serve: After grilling, carefully remove the corn ribs from the grill. If desired, drizzle with fresh lime juice for a zesty kick and sprinkle generously with chopped parsley to enhance the dish's vibrancy. Serve warm as a delightful side dish or a tasty snack for any gathering!
