Ingredients
  

4 cups of water

4 black tea bags (or 4 teaspoons of loose black tea)

1 cup of fresh peaches, pitted and chopped (frozen peaches can be used when out of season)

2 tablespoons of fresh ginger, grated (add more for additional spiciness)

1/2 cup of honey (adjust to taste; agave syrup can be used as a substitute)

Juice of 1 lemon

Fresh mint leaves for garnish

Prepare the Tea: In a medium-sized saucepan, bring 4 cups of water to a rolling boil. Once the water reaches a boil, remove it from heat and add the black tea bags or loose black tea. Allow it to steep for 5-7 minutes, depending on your preferred strength of tea.

    Make the Ginger-Peach Syrup: In another medium saucepan, combine the chopped peaches, freshly grated ginger, and honey along with 1 cup of water. Place over medium heat and bring to a gentle simmer. Let it simmer for about 10-15 minutes while stirring occasionally until the peaches soften and release their juices.

      Strain the Syrup: Once the peach mixture has simmered well, remove it from heat and let it cool slightly. Using a fine mesh strainer, pour the mixture into a bowl or pitcher, discarding the solid peach and ginger pulp. You will be left with a fragrant, sweet syrup infused with peach and ginger.

        Combine and Add Flavor: After the tea has finished steeping, remove the tea bags or strain out the loose tea leaves. In a large pitcher, combine the brewed tea, the ginger-peach syrup, and the juice of 1 lemon. Stir the mixture thoroughly to combine. Taste and adjust sweetness with additional honey if desired.
