1 lb boneless, skinless chicken thighs, diced into bite-sized pieces

1/4 cup soy sauce

1/4 cup teriyaki sauce

2 tablespoons fresh ginger, finely minced

2 cloves garlic, minced

1 tablespoon sesame oil

1/4 cup green onions, chopped (reserve a few for garnish)

1 cup broccoli florets, blanched

1 cup shredded carrots

1/2 cup bell peppers, diced (choose red or yellow for sweetness)

1 cup sharp cheddar cheese, shredded

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

2 teaspoons sriracha (optional, for an extra kick)

Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking.

    Prepare the Chicken: In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger; sauté for about 1 minute until they become fragrant and slightly golden. Next, add the diced chicken thighs to the skillet, season with salt and pepper, and cook for 5-7 minutes, stirring occasionally, until the chicken is browned and thoroughly cooked.

      Mix the Sauce: In a separate bowl, whisk together the soy sauce, teriyaki sauce, and sriracha (if you’re adding heat). Mix until well combined and set aside.
