1 large head of cauliflower, cut into small florets

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

8 small corn or flour tortillas

1 ripe avocado, sliced

1 cup red cabbage, finely shredded

½ cup fresh cilantro, chopped

½ cup crumbled feta cheese or vegan cheese (optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss the florets thoroughly in the spice mixture until they are completely coated, ensuring every piece is well-seasoned.

      Roast the Cauliflower: Spread the seasoned cauliflower florets in a single layer on the prepared baking sheet. Roast them in the preheated oven for about 25-30 minutes.
