Ingredients

2 large sweet potatoes, peeled and diced (approximately 2 cups)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1-2 fresh green chilies, finely chopped (adjust according to your spice preference)

6 large eggs

1/4 cup milk (or your choice of plant-based milk)

1/2 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and black pepper to taste

1/2 cup shredded cheese (cheddar or pepper jack are great options)

Fresh cilantro or parsley for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking the frittata.

Cook the Sweet Potatoes: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and sauté for approximately 10-12 minutes, stirring occasionally, until they become tender and develop a light browning.

Sauté Aromatics: Add the finely chopped onion to the skillet with the sweet potatoes, cooking for an additional 5 minutes until the onion is soft and translucent. Incorporate the minced garlic and chopped green chilies, cooking for another minute until fragrant.

Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, smoked paprika, ground cumin, salt, and black pepper until the mixture is fully combined and slightly frothy.

Combine Ingredients: Carefully pour the egg mixture over the sweet potato and vegetable blend in the skillet. Using a spatula, gently stir to ensure even distribution of the ingredients.

Add Cheese: Evenly sprinkle the shredded cheese over the top of the mixture.

Bake the Frittata: Place the skillet in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top has a beautiful golden hue.

Cool and Serve: Once baked, remove the frittata from the oven and allow it to cool for a few minutes. Garnish with freshly chopped cilantro or parsley to add a pop of color and flavor before slicing.

Enjoy: Cut into wedges and serve warm, perfect for a delicious breakfast, brunch, or light dinner.
