Grilled Chicken and Peach Skewers

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 bell pepper (red or yellow), cut into 1-inch squares

1 small red onion, cut into chunks

2 tablespoons olive oil

2 tablespoons honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh rosemary or thyme sprigs for garnish (optional)

Bamboo or metal skewers (if using bamboo, soak them in water for 30 minutes before grilling)

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine the olive oil, honey, soy sauce, minced garlic, grated ginger, smoked paprika, salt, and pepper. Whisk everything together until the mixture is thoroughly blended and smooth.

    Marinate the Chicken: Add the chicken cubes to the marinade, making sure that each piece is evenly coated. Cover the bowl with plastic wrap and place it in the refrigerator for a minimum of 30 minutes, or up to 2 hours if you want a more flavorful finish.

      Preheat the Grill: Heat your grill to medium-high heat, approximately 400°F (200°C). While the grill is warming, clean the grill grates using a grill brush, and lightly brush them with oil to prevent the skewers from sticking.

        Assemble the Skewers: Once the chicken has marinated, begin threading ingredients onto the skewers. Alternate between chicken, peach wedges, bell pepper squares, and red onion chunks for a vibrant and appealing look.

          Grill the Skewers: Place the assembled skewers on the preheated grill. Cook for about 4-5 minutes on each side, or until the chicken is fully cooked and has reached an internal temperature of 165°F (75°C). The peaches should also become nicely charred and tender.
