2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

For the Bruschetta Topping:

2 cups cherry tomatoes, halved

1/4 cup fresh basil, finely chopped

2 tablespoons balsamic vinegar

1 tablespoon extra-virgin olive oil

1 clove garlic, minced

Salt and pepper, to taste

For the Pasta:

12 ounces penne pasta (or your choice of pasta)

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, whisk together the olive oil, garlic powder, Italian seasoning, salt, and pepper until well combined.

      - Add the chicken breasts and turn them to coat thoroughly in the marinade. Cover and let them rest in the refrigerator for at least 30 minutes to enhance the flavor.

        Prepare the Bruschetta Topping:

          - In a separate bowl, combine the halved cherry tomatoes, finely chopped fresh basil, balsamic vinegar, extra-virgin olive oil, minced garlic, salt, and pepper. Gently toss the mixture to combine and set aside at room temperature to let the flavors meld together.

            Cook the Pasta:

              - Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture. Before draining, ladle out 1 cup of the pasta water and set it aside. Drain the cooked pasta and return it to the pot.

                Grill the Chicken:

                  - Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook each side for about 6-7 minutes, or until the chicken is fully cooked (the internal temperature should reach 165°F). After grilling, allow the chicken to rest for 5 minutes, then slice it into bite-sized strips.

                    Combine Pasta and Bruschetta:

                      - In the pot with the drained pasta, add the bruschetta topping and gently mix until evenly distributed. If the mixture appears too dry, gradually stir in some reserved pasta water until you achieve your desired creamy consistency.
