Grilled Chicken Tostadas

2 large chicken breasts

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and black pepper, to taste

8 small corn tostada shells

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup crumbled feta cheese

1 ripe avocado, sliced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Salsa or your favorite hot sauce (optional)

Instructions
 

Marinate the Chicken: In a medium-sized bowl, mix together the olive oil, smoked paprika, garlic powder, ground cumin, chili powder, salt, and black pepper until well combined. Add the chicken breasts to the bowl, ensuring they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, allowing up to 2 hours for deeper flavor absorption.

    Preheat the Grill: While the chicken marinates, preheat your grill to a medium-high temperature, approximately 400°F (200°C).

      Grill the Chicken: Once the grill is hot, take the chicken breasts out of the marinade, letting any excess drip off. Place the chicken directly on the grill grates and cook for about 6-7 minutes on each side. You're aiming for the chicken to reach an internal temperature of 165°F (75°C). Once fully cooked, remove the chicken from the grill and let it rest for 5 minutes to retain its juices.

        Toast the Tostada Shells: As the chicken rests, place the corn tostada shells on the grill. Toast each side for about 1-2 minutes, or until they are warm and crispy but not burnt.
