Ingredients

2 store-bought or homemade flatbreads

1 cup marinara sauce or pizza sauce

1 ½ cups shredded mozzarella cheese

½ cup cherry tomatoes, halved

¼ cup sliced black olives

½ cup sliced bell peppers (choose any color for variety)

¼ cup red onion, thinly sliced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions

Preheat the Grill: Set your grill to medium-high heat. For gas grills, ensure a steady flame; for charcoal grills, wait until the coals are glowing and covered with ash to get the perfect grilling temperature.

Prepare the Flatbreads: Lightly brush one side of each flatbread with olive oil. Season this oiled side with a pinch of salt, a sprinkle of pepper, and dust with dried oregano and garlic powder for extra flavor.

Grill the Flatbreads: Place the flatbreads on the grill with the oiled side facing down. Close the lid and grill for about 2-3 minutes, until the bottom is lightly charred and the flatbread maintains its shape. Keep an eye on it to prevent burning.

Add the Toppings: Carefully flip the flatbreads using tongs. Quickly spread ½ cup of marinara or pizza sauce over each flatbread, leaving a small border around the edges for a crispy crust. Layer on the shredded mozzarella evenly, then add the halved cherry tomatoes, sliced olives, bell peppers, and thinly sliced red onion.

Finish Grilling: Close the grill lid again and cook for an additional 3-5 minutes. Keep a close watch until the cheese is fully melted, bubbling, and the edges of the flatbread are nice and crispy.

Garnish and Serve: Once the pizzas are done, carefully lift them off the grill. Top with fresh basil leaves to add a burst of color and freshness. Slice into pieces and serve warm for maximum enjoyment.
