Ingredients

For the Grilled Salmon:

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

For the Pineapple Salsa:

1 cup fresh pineapple, diced into small cubes

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1 jalapeño pepper, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions

Prepare the Marinade: In a small mixing bowl, combine the olive oil, lime juice, garlic powder, smoked paprika, and a pinch of salt and pepper. Whisk together until smooth and well-blended.

Marinate the Salmon: Place the salmon fillets in a shallow dish. Pour the marinade evenly over the salmon, ensuring each fillet is well-coated. Cover the dish with plastic wrap and refrigerate for a minimum of 30 minutes, allowing the flavors to infuse. For the best flavor, marinate for up to 2 hours.

Create the Pineapple Salsa: In a separate mixing bowl, combine the diced fresh pineapple, finely chopped red bell pepper, red onion, minced jalapeño, chopped cilantro, and the juice of one lime. Gently mix all ingredients together until well incorporated. Season with salt to taste and set aside, allowing the salsa to rest so the flavors meld.

Preheat the Grill: Preheat your grill to medium-high heat, aiming for a temperature of around 400°F (200°C). If you're using a grill pan, preheat it on the stove over medium-high heat.

Grill the Salmon: Remove the salmon from the marinade, letting any excess marinade drip off. Place the fillets skin-side down on the hot grill. Grill each fillet for approximately 4-5 minutes on one side, then carefully flip and continue grilling for another 4-5 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Plate and Serve: Once the salmon is thoroughly cooked, gently lift the fillets off the grill. Serve the salmon hot and generously spoon the vibrant pineapple salsa over the top.

Enjoy Your Meal! For an extra touch, consider garnishing with additional cilantro leaves or lime wedges on the side.
