2 slices of sourdough bread

1 tablespoon unsalted butter, divided

2 large eggs

1/4 cup shredded sharp cheddar cheese

1/4 cup shredded Monterey Jack cheese

1/4 cup roasted Hatch green chiles, finely chopped

Salt and freshly ground black pepper, to taste

1 tablespoon fresh cilantro, finely chopped (optional for garnish)

Sliced avocado, for serving (optional)

Instructions
 

Prepare the Scrambled Eggs: In a skillet over medium heat, melt 1/2 tablespoon of butter. Once melted, crack the eggs into the skillet, season with salt and pepper, and gently scramble. Stir continuously until the eggs are fully cooked and fluffy, typically about 3-4 minutes. Remove from heat and set aside.

    Combine the Cheeses: In a mixing bowl, combine the shredded sharp cheddar cheese, Monterey Jack cheese, and the finely chopped roasted Hatch green chiles. Stir until the ingredients are evenly mixed.

      Butter the Bread: Take the remaining 1/2 tablespoon of butter and evenly spread it on one side of each slice of sourdough bread. This buttered side will create a golden and crispy crust when grilled.

        Assemble the Sandwich: On the unbuttered side of one slice of bread, layer half of the cheese and chile mixture. Next, add the scrambled eggs, followed by the rest of the cheese mixture. Top with the second slice of bread, ensuring the buttered side is facing up.

          Grill the Sandwich: Heat a skillet over medium-low heat. Once warm, place the sandwich in the skillet. Grill for about 4-5 minutes, or until the bottom side is golden brown and the cheese begins to melt.
