1 cup roasted Hatch green chilies, peeled and diced

½ cup shredded sharp cheddar cheese

4 large flour tortillas

2 tablespoons extra virgin olive oil

Salt and freshly ground black pepper, to taste

Prepare the Ingredients: Begin by roasting the Hatch green chilies. You can do this over an open flame or under a broiler until the skins are blistered and charred. Once roasted, place them in a bowl and cover with plastic wrap for about 10 minutes to steam, which will make peeling easier. Remove the skins and seeds then dice the chilies. While your chilies are cooling, dice the onions and tomatoes.

    Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the finely diced onions and sauté for 2-3 minutes until they become translucent and fragrant. Next, incorporate the diced Hatch green chilies and tomatoes into the skillet. Cook for an additional 2 minutes, stirring occasionally.
