Ingredients

For the Chicken:

2 lbs boneless, skinless chicken breasts

1 cup of low-sugar BBQ sauce (homemade or store-bought)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

For the Sweet Potato Layer:

4 large sweet potatoes, peeled and diced into 1-inch cubes

1 cup milk (or unsweetened almond milk for a dairy-free option)

2 tablespoons maple syrup (optional, for added sweetness)

1 teaspoon ground cinnamon

1 tablespoon butter (or coconut oil for a dairy-free alternative)

Salt, to taste

For the Topping:

1 cup panko breadcrumbs (substitute with gluten-free breadcrumbs if necessary)

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 cup grated Parmesan cheese (optional, for a cheesy flavor)

Instructions

Preheat the Oven:

    - Preheat your oven to 375°F (190°C).

      Cook the Chicken:

        - Heat the olive oil in a large skillet over medium heat.

          - Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.

            - Place the seasoned chicken in the skillet and cook for approximately 5-7 minutes on each side, or until the chicken is browned and cooked through. Remove from heat and shred the chicken using two forks.

              Mix the BBQ Sauce:

                - In a bowl, combine the shredded chicken with the BBQ sauce, stirring until the chicken is thoroughly coated.

                  Prepare the Sweet Potatoes:

                    - In a large pot, bring salted water to a boil and add the diced sweet potatoes. Cook until tender, about 15-20 minutes.

                      - Once cooked, drain the sweet potatoes and return them to the pot.

                        - Add the milk, maple syrup, cinnamon, butter, and salt to the sweet potatoes. Mash with a potato masher or fork until creamy and smooth.

                          Assemble the Casserole:

                            - Spread the BBQ chicken mixture evenly across the bottom of a large baking dish.

                              - Layer the creamy mashed sweet potatoes on top, spreading it evenly with a spatula.

                                Prepare the Topping:

                                  - In a small bowl, mix together the panko breadcrumbs, olive oil, dried thyme, and Parmesan cheese (if using) until the breadcrumbs are fully coated with oil.

                                    Top the Casserole:

                                      - Evenly sprinkle the breadcrumb mixture over the mashed sweet potatoes.

                                        Bake:

                                          - Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and crispy.

                                            Serve:

                                              - Allow the casserole to cool for about 5 minutes before serving. Enjoy the comforting and flavorful combination of BBQ chicken and sweet potatoes while warm!
