Ingredients

2 cups rolled oats

1 cup mashed ripe bananas (approximately 2 large bananas)

1 cup fresh or frozen blueberries (if using frozen, do not thaw)

1/4 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup (use maple syrup for a vegan option)

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup chopped nuts or seeds (optional, for added crunch)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by lining it with parchment paper, leaving some overhang on the sides for easy lifting later.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Use a fork or whisk to mix thoroughly until the mixture is smooth and well-integrated.

Combine Dry Ingredients: In a separate bowl, mix the rolled oats, ground cinnamon, baking powder, and salt. Stir the dry ingredients together until they are evenly distributed.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Carefully fold in the blueberries and chopped nuts or seeds (if using), ensuring not to crush the blueberries while mixing.

Transfer to Baking Dish: Pour the combined mixture into your prepared baking dish. Use a spatula or your hands to spread it evenly and press down firmly to ensure it holds together while baking.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes. The oat bars are done when the edges begin to turn golden brown and a toothpick inserted in the center comes out clean.

Cool and Slice: Once baked, remove the dish from the oven and let the bars cool in the pan for about 10 minutes. Carefully lift the bars out by pulling on the parchment paper, then transfer them to a wire rack to cool completely. After cooling, slice into squares or rectangles.

Store: Store the oat bars in an airtight container at room temperature for up to 5 days or refrigerate them for a longer shelf life.
