Ingredients

2 ripe bananas, thoroughly mashed until smooth

1 cup rolled oats

1/2 cup almond flour

1/4 cup honey or maple syrup (your choice)

1/4 cup unsweetened applesauce

1/2 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional, but highly recommended)

1/4 cup chopped nuts (such as walnuts or pecans, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (180°C). Prepare a baking sheet by lining it with parchment paper for easy removal of the cookies later.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), unsweetened applesauce, and pure vanilla extract. Stir these ingredients together until they are well blended and smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, almond flour, ground cinnamon, baking soda, and salt. Ensure that the dry ingredients are evenly mixed.

Integrate Mixtures: Slowly pour the dry mixture into the bowl with the wet ingredients. Stir gently until the two mixtures are just combined – be careful not to overmix! If using, fold in the dark chocolate chips and/or the chopped nuts at this point.

Scoop the Cookie Dough: Using a tablespoon or a cookie scoop, drop rounded balls of dough onto your prepared baking sheet. Make sure to space them about 2 inches apart to allow for slight spreading during baking.

Flatten the Cookies: To ensure uniform cookies, gently press down on each cookie ball to flatten them slightly. Keep in mind that they won’t spread a lot while baking.

Bake: Place the baking sheet in the oven and bake for 12 to 15 minutes. You’re looking for a golden brown edge on the cookies to indicate they are done.

Cool Down: After baking, remove the cookies from the oven. Allow them to cool on the baking sheet for about 5 minutes before carefully transferring them to a wire rack to cool completely.
