1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 medium sweet potato, peeled and cubed

1 cup butternut squash, peeled and cubed

1 cup zucchini, chopped

1 red bell pepper, diced

1 cup fresh green beans, trimmed and cut into 2-inch pieces

1 can (15 oz) chickpeas, drained and rinsed

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Olive Oil: In a large pot, warm the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, stirring occasionally, until the onion is soft and translucent.

    Add Garlic: Stir in the minced garlic and continue to sauté for another minute, allowing the flavors to release and become aromatic.

      Cook the Vegetables: Incorporate the sliced carrots, chopped celery, cubed sweet potato, and butternut squash into the pot. Cook for approximately 5-6 minutes, mixing every now and then, until the vegetables begin to soften and become fragrant.

        Incorporate Remaining Ingredients: Add the diced zucchini, bell pepper, halved green beans, drained chickpeas, vegetable broth, dried thyme, rosemary, and smoked paprika. Stir thoroughly to combine all the ingredients evenly.
