  • 4.0 medium russet potatoes
  • 2.0 tablespoons olive oil
  • 1.0 teaspoon truffle oil
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon onion powder
  • 1.0 teaspoon dried oregano
  • 1.0 teaspoon dried thyme
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon black pepper
  • 0.5 cup freshly grated Parmesan cheese
  • None to taste fresh parsley, chopped
  • None to taste sea salt

Instructions
 

  • Prep the Potatoes: Start by washing the russet potatoes thoroughly. Peel them if you prefer, but leaving the skin on adds a nice texture. Cut each potato into evenly shaped fries, about 0.25 inch thick.
  • Soak the Potatoes: Place the cut fries in a bowl of cold water for at least 30 minutes. This helps to remove excess starch and results in a crispier fry.
  • Dry the Fries: After soaking, drain the fries and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.
  • Season the Fries: In a large bowl, toss the dried fries with olive oil, truffle oil, garlic powder, onion powder, oregano, thyme, smoked paprika, and black pepper until evenly coated.
  • Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Air Fry the Fries: Place the seasoned fries in the air fryer basket in a single layer, ensuring they are not overcrowded (you may need to cook in batches). Air fry for about 15-20 minutes, shaking the basket halfway through to ensure even cooking.
  • Add Parmesan: When the fries are golden and crispy, sprinkle the grated Parmesan cheese over them and air fry for an additional 2-3 minutes to melt the cheese.
  • Garnish and Serve: Remove the fries from the air fryer and transfer them to a serving platter. Garnish with freshly chopped parsley and sprinkle with sea salt to taste.
