2 medium zucchinis, spiralized into noodles (zoodles)

1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

3 cloves garlic, minced

1 cup low-fat Greek yogurt

1/2 cup grated Parmesan cheese

1/2 cup unsweetened almond milk (or any other milk of your choice)

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crushed red pepper flakes (optional, for added spice)

Prepare the Chicken: Season the chicken breasts generously with salt, pepper, and half of the Italian seasoning. In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Once done, remove the chicken from the skillet and let it rest for 5 minutes. After resting, slice the chicken into strips.

    Make the Alfredo Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté, stirring frequently, for about 1 minute or until it becomes fragrant. Lower the heat further and stir in the Greek yogurt, grated Parmesan cheese, almond milk, and the remaining Italian seasoning. Mix continuously until the cheese melts completely and the sauce reaches a creamy consistency. If you prefer a thinner sauce, gradually add a little more almond milk until you achieve your desired thickness.

      Combine Zoodles and Sauce: Gently add the spiralized zucchini noodles to the skillet with the Alfredo sauce. Toss the zoodles carefully to coat them evenly with the creamy sauce. Cook for 2-3 minutes, just until the noodles are warmed through but still retain a slightly crunchy texture.
