Homemade Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old for optimal texture)

1 cup cooked, shredded chicken breast

2 tablespoons vegetable oil (divided)

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for added flavor)

1 teaspoon sesame oil

Salt and pepper, to taste

Prep the Rice: If you’re using fresh rice, spread it out in an even layer on a baking sheet and let it cool for about 10-15 minutes. This cooling process helps the rice firm up and prevents it from becoming mushy. Ideally, using day-old rice provides the best texture for frying.

    Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Once hot, pour in the beaten eggs. Scramble the eggs until fully cooked and set aside on a plate.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the minced garlic and the white parts of the chopped green onions. Sauté for about 1 minute or until fragrant, keeping a close eye to avoid burning.

        Add Chicken and Veggies: Stir in the shredded chicken and the mixed vegetables to the skillet. Cook for approximately 3-4 minutes, stirring occasionally, until the vegetables are heated throughout and tender.

          Incorporate Rice: Add the cooled jasmine rice to the skillet, using a spatula to break up any clumps. Ensure the rice combines well with the chicken and vegetables by mixing thoroughly.

            Season the Rice: Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Stir well to ensure every grain of rice is evenly coated with the sauces. Taste the mixture and season with salt and pepper as needed.
