Ingredients

For the Meatballs:

1 lb ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 large egg

2 cloves garlic, finely minced

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper, to taste

For the Casserole:

1 cup long-grain white rice

2 cups chicken broth

1 can (15 oz) diced tomatoes, undrained

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, chopped

2 cloves garlic, finely minced

1 cup shredded mozzarella cheese

1 tsp paprika

Salt and pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for the casserole.

Prepare the Meatballs: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix all the ingredients thoroughly until fully combined.

Shape the Meatballs: Using your hands, form the mixture into meatballs approximately 1 to 1.5 inches in diameter. Place each meatball onto a baking sheet lined with parchment paper. You should yield about 20 meatballs.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and have a golden-brown exterior.

Sauté the Onions and Garlic: While the meatballs bake, heat a tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Then, add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Add Rice and Liquid Ingredients: Stir the uncooked rice into the skillet along with the chicken broth, undrained diced tomatoes, frozen mixed vegetables, paprika, salt, and pepper. Bring the mixture to a gentle simmer. Once simmering, cover the skillet and reduce the heat, allowing it to cook for about 15 minutes, or until the rice is tender and the liquid is mostly absorbed.

Combine Meatballs and Casserole Base: Once the rice is cooked, gently fold the baked meatballs into the rice mixture until evenly distributed. Transfer this combined mixture into a greased 9x13 inch casserole dish (or one of similar size).

Top with Cheese: Evenly sprinkle the shredded mozzarella cheese over the top of the casserole, adding a generous layer for extra gooeyness.

Bake the Casserole: Place the casserole back in the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Serve and Enjoy: Remove the casserole from the oven and let it cool for a few minutes before serving. If desired, garnish with extra chopped parsley for a fresh touch!
