1 cup cream cheese, softened at room temperature

½ cup sour cream

1 cup shredded cheddar cheese, divided

½ cup diced jalapeños (use fresh or pickled based on your heat preference)

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped fresh cilantro (optional, for garnish)

Instructions
 

Prepare the Corn:

    - If using fresh corn: Carefully shuck the ears and slice the kernels off the cobs using a sharp knife.

      - If opting for canned corn: Drain and rinse under cool water to remove excess sodium.

        - For frozen corn: Thaw and drain well to eliminate excess moisture.

          Mix the Base:

            - In a large mixing bowl, combine the softened cream cheese and sour cream. Using an electric mixer or a sturdy spatula, beat together until the mixture is smooth and creamy without lumps.

              Add Seasonings:
