4 bone-in chicken thighs, skin-on

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

Zest of 1 lemon

For the Lemon Basil Couscous:

1 cup couscous

1 1/4 cups low-sodium chicken broth (or water)

2 tablespoons fresh lemon juice

Zest of 1 lemon

1/4 cup fresh basil, chopped

1 tablespoon olive oil

Salt and pepper to taste

Optional: Cherry tomatoes and avocado slices for garnish

Preheat the Oven: Set your oven to preheat at 425°F (220°C). This will ensure it's hot enough to achieve that perfect crispy skin on the chicken.

    Prepare the Chicken: In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, dried thyme, lemon zest, and a generous pinch of salt and pepper.
