Lemon Garlic Chicken Pasta with Broccoli

8 oz (225g) fettuccine or your preferred pasta

2 medium-sized chicken breasts, thinly sliced

2 cups broccoli florets (about one medium head)

4 cloves garlic, minced

1/4 cup extra virgin olive oil

Juice and zest of 1 large lemon

1/2 tsp red pepper flakes (or to taste)

Salt and black pepper, to taste

1/2 cup freshly grated Parmesan cheese

Fresh parsley, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Once boiling, add the fettuccine and cook according to the package instructions until al dente (usually about 8-10 minutes). Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta, then set aside.

    Blanch the Broccoli: Using the same pot of boiling water, carefully add the broccoli florets. Blanch for about 2 minutes until they turn bright green but retain a crisp texture. Using a slotted spoon, transfer the broccoli to a bowl filled with ice water to arrest the cooking process. After a few minutes, drain and set aside with the pasta.

      Cook the Chicken: In a large skillet, heat 2 tablespoons of the olive oil over medium-high heat. Season the sliced chicken with salt and black pepper. Add the chicken to the hot skillet in a single layer and cook for about 5-7 minutes, turning occasionally, until the chicken is golden brown and cooked through. Once done, transfer the chicken to a plate and set aside.
