Lemon Garlic Shrimp and Asparagus Pasta

8 oz (225 g) linguine or spaghetti

1 lb (450 g) large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 lemon, zested and juiced

1/4 cup (60 ml) olive oil

1/4 cup (60 ml) chicken broth (in place of white wine if preferred)

1/2 tsp red pepper flakes (optional for heat)

Salt and black pepper, to taste

1/4 cup (15 g) fresh parsley, finely chopped

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Once cooked, reserve 1 cup of the pasta water, then drain and set the pasta aside in a large bowl.

    Sauté the Asparagus: Place a large skillet over medium heat and add 2 tablespoons of olive oil. When hot, add the asparagus pieces. Sauté for approximately 4-5 minutes, or until the asparagus is tender yet still crisp. Season with a pinch of salt and pepper, then remove from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the remaining olive oil and increase the heat to medium-high. Add the minced garlic and cook for about 30 seconds, stirring frequently to avoid burning. Next, add the shrimp along with red pepper flakes (if using) and season with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque.

        Deglaze and Combine: Pour in the chicken broth, fresh lemon juice, and lemon zest. Stir well and allow the mixture to simmer for about 2 minutes, scraping the bottom of the skillet to release any browned bits that add flavor.

          Bring it All Together: Add the drained pasta and sautéed asparagus back into the skillet. Gently toss everything together, adding the reserved pasta water a little at a time, until you reach your desired sauce consistency that coats the pasta nicely.
