4 cloves of garlic, minced

1 medium lemon, zested and juiced

3 tablespoons olive oil, divided

1 tablespoon soy sauce

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 green onions, thinly sliced (for garnish)

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the shrimp with a pinch of salt, freshly cracked pepper, half of the lemon zest, and half of the lemon juice. Toss gently to ensure the shrimp is evenly coated. Allow this to marinate for 10-15 minutes while you prepare the other ingredients.

    Sauté the Asparagus: In a large skillet or wok, pour in 1 tablespoon of olive oil and heat over medium-high heat. Once the oil is shimmering, add the asparagus pieces. Stir-fry for 3-4 minutes, cooking until the asparagus turns a vibrant green and is tender yet still crisp. Remove the asparagus from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil.
