4 boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 1 large lemon

1 tablespoon lemon pepper seasoning

1 cup long-grain white rice

2 cups broccoli florets (fresh or frozen)

2 1/4 cups chicken broth or water

1 tablespoon butter

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, lemon pepper seasoning, garlic powder, salt, and black pepper. Add the chicken breasts to the marinade and use your hands or tongs to ensure they are thoroughly coated. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes, or up to 2 hours for enhanced flavor absorption.

      Cook the Rice:

        In a medium saucepan, pour in the chicken broth and bring it to a vigorous boil over medium-high heat. Once boiling, stir in the long-grain rice, then reduce the heat to low, cover with a lid, and let it cook for approximately 10 minutes.
