Ingredients

For the Lemon Pepper Tilapia:

4 tilapia fillets

2 tablespoons olive oil

Zest and juice of 1 large lemon

1 teaspoon freshly ground black pepper

1 teaspoon garlic powder

Salt, to taste

Fresh parsley, chopped (for garnish)

For the Garlic Spinach:

6 cups fresh spinach leaves, thoroughly washed and drained

3 cloves garlic, finely minced

2 tablespoons olive oil

1/4 teaspoon red pepper flakes (optional, for a kick)

Salt and freshly ground black pepper, to taste

Juice of 1/2 lemon

Instructions

Prepare the Tilapia Marinade:

    - In a shallow dish, combine the olive oil, lemon zest, lemon juice, freshly ground black pepper, garlic powder, and salt. Whisk together until well blended.

      - Gently place the tilapia fillets into the marinade, ensuring each piece is evenly coated. Cover and let the fish marinate for 15-20 minutes to infuse the flavors.

        Cook the Tilapia:

          - Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tilapia fillets to the skillet.

            - Cook the fish for approximately 4-5 minutes on each side, or until they develop a beautiful golden brown crust and flake easily with a fork. Once cooked, remove the fillets from the skillet and keep warm.

              Prepare the Garlic Spinach:

                - In a separate pan, heat the olive oil over medium heat. Once shimmering, add in the minced garlic and optional red pepper flakes, sautéing for about 1 minute until fragrant but not browned.

                  - Add the fresh spinach leaves to the pan, stirring frequently as they wilt. This should take about 3-4 minutes. Once wilted, season with salt, pepper, and a gentle squeeze of lemon juice to brighten the flavors.

                    Plate the Dish:

                      - On each serving plate, create a bed of the sautéed garlic spinach. Place a lemon pepper tilapia fillet on top of the spinach.

                        - Finish the presentation with a sprinkle of freshly chopped parsley for an appealing pop of color and garnish.

                          Serve and Enjoy:

                            - Dish up your Lemon Pepper Tilapia accompanied by the garlicky spinach immediately. Pair with a side of your choice, such as fluffy quinoa or crispy roasted potatoes, for a delightful meal.
