1 tsp baking powder

½ tsp baking soda

½ tsp salt

¼ cup poppy seeds

1 cup granulated sugar

½ cup unsalted butter, softened to room temperature

2 large eggs

1 tsp pure vanilla extract

1 tbsp fresh lemon zest (from about 1 large lemon)

½ cup sour cream

½ cup freshly squeezed lemon juice (about 2 large lemons)

Optional: powdered sugar for dusting

Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray or butter.

    In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds until evenly combined. Set this bowl aside.

      In a large mixing bowl, cream the softened unsalted butter and granulated sugar together using an electric mixer set to medium speed. Beat the mixture until it is light and fluffy, about 3-4 minutes.

        Gradually add the eggs into the butter mixture, one at a time, ensuring thorough mixing after each addition to incorporate well. Next, mix in the pure vanilla extract and the fresh lemon zest until blended.

          Gently add half of the prepared flour mixture to the butter mixture, followed by the sour cream and freshly squeezed lemon juice. Mix until just combined. Then, add the remaining flour mixture, taking care not to overmix; it's perfectly fine to have a few lumps in the batter.

            Using a scoop or spoon, distribute the batter evenly among the prepared muffin tin, filling each cup approximately two-thirds full to allow for rising during baking.

              Bake the muffins in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs clinging to it.

                Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. After that, gently transfer them to a wire rack to cool completely.
