2 ripe avocados, peeled and pitted

1 large cucumber, peeled and roughly chopped

2 cups ripe tomatoes, chopped (or 1 can of diced tomatoes)

1 green bell pepper, chopped

1 small red onion, finely chopped

2 cloves garlic, minced

2 cups vegetable broth, chilled

2 tablespoons fresh lime juice

2 tablespoons extra virgin olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro or mint leaves for garnish

Optional: 1 small jalapeño, seeded and finely chopped (for a spicy kick)

In a high-speed blender or food processor, add the ripe avocados, chopped cucumber, tomatoes (fresh or canned), green bell pepper, red onion, minced garlic, and finely chopped jalapeño (if you like it spicy).
