1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon

1 teaspoon pure vanilla extract

1 cup rolled oats

1/2 cup almond flour (or your choice of nut flour)

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh blueberries (or thawed frozen blueberries)

1 tablespoon chia seeds (optional)

Extra blueberries and lemon zest for garnish

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare an 8x8-inch (20x20 cm) baking dish by lining it with parchment paper, ensuring there is some overhang on the sides for easy lifting later.

    Mix Wet Ingredients: In a spacious mixing bowl, combine the Greek yogurt, honey (or maple syrup), freshly squeezed lemon juice, lemon zest, and vanilla extract. Using a whisk, blend these ingredients together until the mixture is smooth and fully incorporated.

      Combine Dry Ingredients: In a separate bowl, mix the rolled oats, almond flour, baking powder, and salt. Stir these dry ingredients together until they are evenly mixed.

        Combine Mixtures: Slowly add the dry ingredient mixture to the wet mixture, stirring gently to combine. Once just mixed, carefully fold in the blueberries and chia seeds (if using), taking care not to crush the blueberries.

          Transfer to Baking Dish: Pour the combined batter into the prepared baking dish. Use a spatula to spread it out evenly across the dish.
