1 lb ground turkey

2 medium sweet potatoes, peeled and cut into 1/2-inch cubes

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder (optional, for extra heat)

Salt and black pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

2 tbsp olive oil

Fresh cilantro or parsley, for garnish

Slices of avocado, for topping (optional)

Lime wedges, for serving (optional)

Instructions
 

Heat the Skillet: In a large skillet, add the olive oil and heat over medium heat. Once the oil is shimmering, add the diced sweet potatoes. Sauté for about 5-7 minutes, stirring occasionally, until the sweet potatoes begin to soften and turn golden.

    Add Vegetables: Incorporate the diced onion, red bell pepper, and green bell pepper into the skillet. Continue to cook for an additional 3-5 minutes, stirring frequently, until the vegetables are tender. Add the minced garlic and sauté for another 1-2 minutes until fragrant, being careful not to let it burn.

      Cook the Turkey: Push the vegetable mixture to one side of the skillet, creating space on the other side. Add the ground turkey to the empty side. Using a spatula, break the turkey apart and cook it, stirring occasionally, until it is browned and completely cooked through, about 5-7 minutes. Once cooked, mix the turkey with the vegetables until well combined.

        Season the Mixture: Sprinkle in the smoked paprika, ground cumin, chili powder (if using), and season with salt and black pepper. Stir everything together thoroughly and let it cook for an additional 2-3 minutes to allow the flavors to blend.
