Ingredients

For the Salted Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, cubed and at room temperature

1/2 cup heavy cream

1 teaspoon sea salt

For the Mousse:

1 1/2 cups heavy cream, chilled

6 ounces semi-sweet chocolate, finely chopped

1/2 cup salted caramel sauce (prepared above)

2 large eggs, at room temperature

1/4 cup granulated sugar

1 teaspoon pure vanilla extract

For Garnish:

Whipped cream

Additional salted caramel sauce

Chocolate shavings or a light dusting of cocoa powder

Instructions

Prepare the Salted Caramel Sauce:

    - In a medium saucepan, place the granulated sugar over medium heat. Stir constantly using a wooden spoon or heat-resistant spatula to ensure it melts evenly.

      - Continue stirring until the sugar transforms into a rich amber-colored liquid, which should take about 5-7 minutes.

        - Slowly add the cubed butter, stirring continuously until fully melted and well combined with the caramel.

          - Carefully pour in the heavy cream while stirring (expect it to bubble vigorously). Continue stirring until the mixture is smooth and incorporated.

            - Remove the saucepan from heat and stir in the sea salt. Allow the sauce to cool completely before using.

              Make the Mousse:

                - In a heatproof bowl, combine the finely chopped semi-sweet chocolate with 1/2 cup of the cooled salted caramel sauce. Place the bowl over a pot of simmering water (double boiler) and heat gently, stirring until the chocolate is fully melted and the mixture is smooth. Remove from heat and allow it to cool slightly.

                  - In a separate medium bowl, use an electric mixer to beat the chilled heavy cream until stiff peaks form. Set this whipped cream aside.

                    - In another bowl, whisk the eggs and granulated sugar together until thick and pale in color. Stir in the pure vanilla extract to combine.

                      - Gently fold the melted chocolate mixture into the egg mixture until fully integrated, and then carefully fold in the whipped cream, mixing just until no white streaks remain.

                        Assemble the Mousse:

                          - Spoon the velvety mousse mixture into individual serving dishes or cups. Gently tap each dish on the counter to release any air bubbles for a smoother finish.

                            - Cover the dishes with plastic wrap and refrigerate for a minimum of 4 hours, or ideally overnight for the best texture and flavor.

                              Serve:

                                - When ready to serve, remove the mousse from the refrigerator. Top each dessert with a dollop of freshly whipped cream, a generous drizzle of salted caramel sauce, and finish with chocolate shavings or a light dusting of cocoa powder to enhance the presentation.
