Ingredients

8 rice paper wrappers

1 large ripe mango, sliced into thin strips

1 medium cucumber, julienned

1 cup shredded carrots

1/2 cup fresh mint leaves

1/2 cup fresh basil leaves

1 ripe avocado, sliced

1/4 cup chopped green onions

1 tablespoon sesame seeds (optional, for garnish)

For the Dipping Sauce:

3 tablespoons hoisin sauce

2 tablespoons creamy peanut butter

1 tablespoon rice vinegar

1 teaspoon chili garlic sauce (optional for spice)

1 teaspoon sesame oil

Water (to thin, if necessary)

Instructions

Prepare the Filling: Begin by preparing all of your filling ingredients. Thinly slice the mango into strips, julienne the cucumber, shred the carrots, and slice the avocado. Arrange each ingredient in separate bowls to streamline the assembly process.

Make the Dipping Sauce: In a medium-sized bowl, combine the hoisin sauce, peanut butter, rice vinegar, chili garlic sauce, and sesame oil. Whisk these ingredients together until smooth. Gradually add water, one tablespoon at a time, until the sauce reaches your preferred consistency for dipping. Adjust the sweetness and spice levels according to your taste, then set the sauce aside.

Soften the Rice Paper: Fill a large shallow dish or a wide plate with warm water. Take one rice paper wrapper and dip it into the water for about 10-15 seconds, or until it becomes soft and pliable. Once softened, carefully remove it and let the excess water drip off before moving on to the next step.

Fill the Roll: Place the softened rice paper wrapper on a clean, damp kitchen towel or cutting board. Begin by layering your filling in the center of the wrapper. Start with a few fresh mint and basil leaves, then add a generous row of mango, cucumber, shredded carrots, slices of avocado, and sprinkle with green onions.

Roll it Up: To enclose the filling, fold the sides of the rice paper over the ingredients, similar to folding an envelope. Then, roll from the bottom of the wrapper upwards, tucking in the sides as you go. This will help secure the filling inside. Repeat this process with the remaining rice paper wrappers and filling ingredients.

Serve: Arrange the completed summer rolls on a serving platter. For an extra touch, lightly sprinkle sesame seeds over the rolls for added texture and crunch. Serve the rolls alongside your homemade dipping sauce for a delightful appetizer.

Enjoy: Gather your family or friends, dip each summer roll in the sauce, and savor the vibrant and refreshing flavors of your Mango Cucumber Summer Rolls!
